Sweet and Spicy Vinaigrette
A sweet and spicy, Thai-inspired dressing, delicious on salads with pea pods, radishes, and shredded carrots, or as a marinade with grilled meats and vegetables.
Ingredients
- ¼ cup (60 ml) apple cider vinegar
- 8 each dates [or 1/3 cup honey], pitted
- 1 teaspoon sriracha sauce
- 1 teaspoon soy sauce
- 1 each garlic clove, peeled
- 1 piece fresh ginger root, 1/8" thick
- 1 teaspoon ground black pepper
- ⅔ cup (160 ml) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container except olive oil and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
- Reduce speed to Variable 5 and remove lid plug. Pour olive oil through the lid plug opening in a steady stream. Replace lid plug and increase to its highest speed. Blend for 20 seconds.
