Tomato Vinaigrette
Simple. Delicious. And perfect for any fresh salad you’re serving to family or guests. Plus, you can make ahead and store right in the blending container in the refrigerator for later use!
Ingredients
- 2 Tablespoons (30 ml) red wine vinegar
- 1 teaspoon honey
- ground black pepper
- salt, optional
- shallot, peeled
- 1 (140 g) Roma tomato, halved
- (80 ml) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the blade base.
- Run the Emulsify Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
Notes
Delicious served over a fresh tomato, basil, and mozzarella platter.
