Fresh Tomato Sauce
The Vitamix chops and purees fresh tomatoes and herbs into a classic Italian sauce.
- 1.4 kg (16 medium) ripe roma tomatoes, halved
- 120 g (1 small) yellow onion, peeled
- 80 g (1 small) carrot
- 60 ml (¼ cup) tomato paste
- 2 garlic cloves, peeled
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt, optional
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 30 seconds, using the tamper to press the ingredients toward the blades.
- Pour into saucepan and simmer for 35 to 40 minutes or until desired consistency is reached.
