Tahini has many uses in the kitchen. It's great spread over warm toast, on crackers or on sandwiches.
- 705 g (5 cups) sesame seeds, toasted
- Place sesame seeds into the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 2 to 3 minutes, using the tamper as necessary to press ingredients toward the blades.
Using toasted sesame seeds for this recipe is not required, however, using toasted seeds helps to create a more uniform and smooth texture rather than a thicker paste. Toasting raw seeds gives the tahini a more intense flavor. Toast seeds at 350°F (180°C) for 10 minutes, stirring and rotating half way through. Be sure to blend this tahini on your blender's highest speed to process your mixture to optimum quality.
