How to Make a Belgian Spiced Cookie Frappé
Cookie butter has grown from a European specialty into a widely used dessert flavor, appearing in everything from baked goods to frozen drinks. Made from finely ground spiced cookies, it has a smooth, spreadable texture and a caramelized flavor with warm notes commonly associated with cinnamon, ginger, nutmeg, cloves, and cardamom. This Belgian Spiced Cookie Frappé turns that familiar flavor into a creamy iced coffee drink with just four ingredients.
Before You Start
This recipe comes together in about 20 seconds, so most of the work is simply measuring the ingredients and loading them in the correct order. The finished drink should be smooth, creamy, and thick enough to feel like a frozen coffee beverage without becoming difficult to sip.
Cookie butter provides both sweetness and body, so taste the drink before adding any extra sweetener. Different brands may vary slightly in sweetness, spice, and consistency.
Ingredients
- 1 cup ice cubes
- 1 teaspoon instant espresso powder
- 2 Tablespoons Belgian spiced cookie butter
- 1 cup 2% milk or plant-based milk
Step 1: Choose Your Milk
The original recipe calls for 2% milk, which gives the frappé a creamy texture without making it overly rich. Plant-based milk also works well, so choose one based on the flavor and consistency you prefer.
Oat milk will generally give the drink a fuller texture, while almond milk creates a lighter result. An unsweetened variety can help keep the cookie butter flavor from becoming too sweet.
Step 2: Measure the Ice
Add 1 cup of ice cubes to the Vitamix container.
Using the specified amount helps create the intended frozen consistency. Too little ice may produce a thinner iced coffee, while too much can dilute the cookie and espresso flavors.
For the best results, use firm, fully frozen ice rather than cubes that have begun to melt.
Step 3: Add the Espresso Powder
Measure 1 teaspoon of instant espresso powder and add it to the container.
Instant espresso dissolves quickly during blending and adds concentrated coffee flavor without introducing more liquid. Make sure you are using instant espresso powder rather than finely ground coffee beans, which can leave the drink gritty.
For a stronger coffee flavor, you can add a little more espresso powder. Increase it gradually, since too much can overpower the warm spices in the cookie butter.
Step 4: Add the Cookie Butter
Add 2 Tablespoons of Belgian spiced cookie butter.
Cookie butter is made by grinding spiced cookies into a smooth spread with a consistency similar to peanut butter or chocolate-hazelnut spread. The cookies traditionally associated with it are known as speculoos or speculaas and have roots in Dutch and Belgian baking traditions.
If the cookie butter is especially firm, stir it in the jar before measuring. This makes it easier to remove from the spoon and helps it blend evenly.
Smooth cookie butter will create the most uniform drink, but a crunchy variety can be used if you do not mind a little extra texture.
Step 5: Pour in the Milk
Add 1 cup of 2% milk or plant-based milk, then secure the lid or blade base according to the container you are using.
The recipe lists the ingredients in a specific order. Following that order helps the ingredients circulate through the blades and blend evenly.
Step 6: Blend the Frappé
Run the Frappé Program. If your Vitamix does not have that program, start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
The finished drink should look smooth and evenly blended, with no visible pieces of ice or streaks of cookie butter.
Avoid blending much longer than necessary. Extended blending can begin to warm the ingredients and thin the frozen texture.
Step 7: Check the Consistency
Remove the lid and check the texture before pouring.
If the frappé is thicker than you prefer, add a small splash of milk and blend again briefly. If it is too thin, add a few more ice cubes and blend just until smooth.
Make adjustments in small amounts so you do not dilute the coffee and cookie flavors.
Step 8: Prepare an Optional Cookie Butter Rim
For a more finished presentation, gently melt a couple of tablespoons of cookie butter and use it to rim the glass. The Vitamix recipe also suggests topping the drink with whipped cream and crushed cookies.
Let the melted cookie butter cool slightly before dipping the glass. It should be soft enough to spread but not so warm that it runs down the sides.
After coating the rim, press it into finely crushed spiced cookies. Work with small crumbs, which will adhere more evenly than large pieces.
Step 9: Pour and Garnish
Pour the frappé into the prepared glass and serve immediately.
Top it with whipped cream, a light dusting of espresso powder, or crushed spiced cookies. You can also drizzle a small amount of softened cookie butter over the whipped cream, but use it sparingly—the drink is already rich and sweet.
Ways to Customize It
Make the coffee flavor stronger
Increase the instant espresso powder slightly, or replace part of the milk with chilled brewed coffee. Using brewed coffee will make the drink less creamy, so reduce the liquid cautiously.
Try a different milk
Use your preferred dairy or plant-based milk. Because each one has a different consistency, you may need to adjust the ice slightly to maintain a thick frappé texture.
Add more spice
Cookie butter already contains warm spice notes, but a pinch of cinnamon can make them more pronounced. Nutmeg, ginger, or cardamom can also work, though each should be used lightly.
Make it more dessert-like
Add whipped cream, crushed cookies, and a cookie butter rim. For a simpler everyday version, skip the garnishes and serve it directly from the blender.
Reduce the sweetness
Choose unsweetened milk and avoid additional syrups or sweetened toppings. You can also start with slightly less cookie butter, though that will reduce both the flavor and the body of the drink.
What to Look for
A successful frappé should be:
- Smooth, without visible ice pieces
- Thick but still easy to pour
- Balanced between coffee and cookie butter
- Creamy without tasting overly heavy
- Served immediately, before the ice begins to melt
The espresso should keep the drink from tasting one-dimensionally sweet, while the cookie butter should provide a distinct caramelized spice flavor.
