Cherry Balsamic Sauce
Dark cherries, balsamic vinegar, and rosemary create a savory-sweet sauce for roasted turkey, pork loin, or vegetables.
Ingredients
- 1 Tablespoon extra virgin olive oil
- 1 (150 g) onion, peeled, diced
- 2 garlic cloves
- 2 sprigs fresh rosemary, stemmed
- ¼ cup (60 ml) balsamic vinegar
- 2 cups (260 g) frozen dark sweet cherries, thawed
- 1 cup (240 ml) vegetable stock
- 1 teaspoon kosher salt, optional
- ¼ teaspoon ground black pepper
Directions
- Place a small saucepan over medium heat and add the oil. Add the onion and cook for 10 minutes, or until translucent. Add the garlic and rosemary and cook for 2 to 3 minutes, or until fragrant. Deglaze with the balsamic vinegar then add the cherries and stock. Bring to a boil, then reduce the heat and simmer until reduced by one-third. Stir in the salt and ground black pepper.
- Carefully place the cherry sauce into the Vitamix container and secure the lid. Run the Dips and Spreads program or start the machine and increase to its highest speed. Blend for 1 minute.
