Strawberry Cheesecake Ice Cream

Cream cheese and half and half blend with frozen strawberries to create this decadent dessert. Top with whipped cream and fresh blueberries for a burst of color.

Ingredients

• ½ cup (120 ml) half & half
• 3 ounces (85 g) cream cheese
• 1 Tablespoon fresh lemon juice
• ¼ teaspoon vanilla extract
• ⅓ cup (70 g) granulated sugar
• 1 cups (225 g) frozen strawberries
• ½ cup (65 g) ice cubes

Directions

1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
2. Run the Frozen Dessert Program or start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30-40 seconds, using the tamper to push ingredients toward the blades.
3. In about 25-35 seconds, the sound of the motor will change and four mounds should form. Stop the machine. Do not over mix or melting will occur. Serve immediately.

Garnish with whipped topping and blueberries
