Vitamix Granola Bars

These sweet and crunchy whole-grain bars are a great make-ahead snack that you can take on the go, or pack in kids' lunches.

Vitamix Granola Bars

Ingredients

  • 50 g (½ cup) wheat berries, or ½ cup (60g) whole wheat flour
  • 30 g (¼ cup) wheat germ
  • 65 g (½ cup) raw almonds
  • 155 g (1 cup) rolled oats
  • 600 g (3 medium) apples, seeded, halved
  • g (¼ teaspoon) salt, optional
  • g (1 teaspoon) ground cinnamon
  • g (1 teaspoon) vanilla extract
  • 45 ml (3 Tablespoons) honey, or agave nectar
  • 60 g (½ cup) dried cranberries

Directions

  1. Place wheat berries, wheat germ, almonds, and oats into the Vitamix container and secure lid.
  2. Start the blender on its lowest speed, then increase to its highest speed
  3. Blend for 30 seconds. Turn machine off. Pour out into bowl.
  4. Place apple into the Vitamix container and secure lid.
  5. Start the blender on its lowest speed, then increase to its highest speed
  6. Blend for 35-40 seconds or until consistency of applesauce. using the tamper to push the apple toward the blades.
  7. Pour into bowl with dry ingredients. Add salt, optional, cinnamon, vanilla, honey, and cranberries to mixture.
  8. Mix gently by hand to combine. Spread into greased 20cm x 20cm (8-inch x 8-inch) pan.
  9. Bake for 25 minutes in a 350˚F (180˚C) oven.

If using wheat berries, blend for 45-60 seconds in step 4.
