Caribbean Dry Rub

Make amazing jerk chicken with this sweet and spicy rub. Allow to sit on raw meat for 10-15 minutes before cooking to maximize flavor.

Caribbean Dry Rub

Ingredients

  • 30 g (2 Tablespoons) kosher salt, optional
  • (2 Tablespoons) dried thyme
  • (1 teaspoon) ground allspice
  • (2 teaspoons) red pepper flakes
  • (1 teaspoon) garlic powder
  • (½ teaspoon) ground cloves
  • (¼ teaspoon) dry mustard
  • 100 g (½ cup) coconut sugar [or date sugar]

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 10 seconds, using the tamper to push ingredients toward the blades.
