Dukkah Spice Rub

This delicious middle Eastern spice blend pairs well with chicken, salmon and pork.

Ingredients

  • (1 Tablespoon) coriander seeds, toasted
  • (1 teaspoon) fennel seed, toasted
  • (1 teaspoon) fennugreek
  • (1 Tablespoon) sesame seeds
  • 20 g (2 Tablespoons) pistachio nuts, toasted, shelled
  • 20 g (2 Tablespoons) hazelnuts, toasted, peeled
  • (1 teaspoon) kosher salt, optional
  • (1 teaspoon) dried mint
  • (1 teaspoon) ground dried sumac

Directions

  1. Combine all ingredients into the Vitamix 8 ounce cup and secure the blade base.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 10 to 15 seconds or until pulverized.

Chef's Notes

Do not over blend this recipe or it will become a nut butter.

  • (1 teaspoon) kosher salt, optional
  • (1 teaspoon) dried mint
  • (1 teaspoon) ground dried sumac

Directions

  1. Place all ingredients into the Vitamix container and secure the lid.
  2. Select Variable 5. Start the blender and blend for 10-15 seconds or until coarsely chopped.
