生薑番茄印度酸辣醬 (Chutney)

新鮮的羅馬番茄、翠玉蘋果、白洋蔥和生薑組合,創造出香甜可口的辣醬。

FPA-Spicy-Mango-Chutney

配料

  • 900 g (2 pounds) roma tomatoes
  • 1 granny smith apples, cored, quartered
  • 360 g (1 ) yellow onion, peeled, quarterd
  • 2 small garlic cloves
  • 5 g (1 Tablespoon) fresh ginger root
  • 215 g (1 cup) brown sugar
  • 200 g (1 cup) granulated sugar
  • 180 ml (¾ cup) white wine vinegar
  • 120 ml (½ cup) red wine vinegar
  • 1 Tablespoon mustard seeds
  • ½ 茶匙馬爾頓鹽 (選用)

做法

  1. 依表列順序將一半的番茄、蘋果、洋蔥、大蒜和生薑根放入 Vitamix 容杯中並蓋緊杯蓋。
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 8.
  4. Blend for 20 seconds, using the tamper to press the ingredients into the blades.
  5. 加入其餘的番茄,然後蓋緊杯蓋。
  6. Use the On/Off switch to quickly pulse 15 times, using the tamper to press the ingredients into the blades, until coarsely chopped.
  7. 將混合物倒入中型平底深鍋中,加入糖、醋、芥末籽和鹽,混合均勻。
  8. Bring mixture to a boil over medium high heat, stirring occasionally. Reduce heat to medium and simmer for 1½ hours, stirring often to prevent sticking, until thickened.
