蔓越莓堅果麵包

以全麥配料製作而成,放入 Vitamix 容杯之前先放入一條柳橙皮,即可增添柑橘風味。

蔓越莓堅果麵包

配料

  • 100 g (1 cup) fresh cranberries
  • 1 Large medium orange, peeled, halved
  • 1 strip orange peel
  • 60 ml (¼ cup) light olive oil
  • 200 g (1 cup) granulated sugar
  • 1 顆大雞蛋
  • 1 teaspoon vanilla extract
  • 1½ teaspoon baking powder
  • ½ 茶匙小蘇打
  • 1 teaspoon salt, optional
  • 240 g (2 cups) whole wheat flour
  • 45 g (½ cup) walnuts

做法

  1. Preheat oven to 350°F (180°C). Lightly coat an 8 1/2 – inch x 4 1/2 – inch (22 cm x 11 cm) loaf pan with vegetable cooking spray or shortening.
  2. 將蔓越莓放入 Vitamix 容杯內並蓋緊杯蓋。
  3. Select Variable 4. Pulse 3 or 4 times. Stop; scrape sides and replace lid. Pulse a few more times to coarse chop. Remove to small bowl.
  4. 將柳橙、柳橙皮、油、牛奶、糖、雞蛋和香草按列出順序放入 Vitamix 容杯內,然後蓋緊杯蓋。
  5. 以最低速啟動調理機,然後增加到最高速,
  6. 攪拌約 20 秒,
  7. 在大型攪拌碗中混合泡打粉、小蘇打、鹽 (選用) 及全麥麵粉,充分拌勻。
  8. 將柳橙混合物倒入乾燥配料中。用手拌勻,直到配料變濕潤。將切碎的核桃和蔓越莓拌勻;請勿過度攪拌。
  9. 將麵糊鋪在準備好的麵包烤盤烤盤。
  10. Bake for 55 to 60 minutes or until a knife inserted into the center comes out clean. Cool on wire rack 30 minutes, then carefully remove from loaf pan and allow to cool completely before slicing.
