南瓜巧克力碎片瑪芬

誰不喜歡吃美味瑪芬,尤其是剛出爐熱騰騰的?這一道不但把南瓜的瓜汁和甜味鎖住,更有碎巧克力餅乾的甜美驚喜。額外加分:非常容易製作,而且超~美~味!

配料

  • 2 large eggs
  • 60 ml (¼ cup) light olive oil
  • 425 公克(1 罐)南瓜泥
  • 60 ml (¼ cup) skim milk
  • 150 g (¾ cup) granulated sugar
  • ½ 茶匙鹽 (選用)
  • 2 teaspoons baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 220 g (1¾ cup) all-purpose flour
  • 120 g (½ cup) chocolate chips

做法

  1. Preheat oven to 350 degrees F (180 degrees C). Lightly coat muffin pan with cooking spray, or use cupcake liners.
  2. Place eggs, oil, pumpkin, milk and sugar into the 48 ounce WET blade Vitamix container in the order listed and secure the lid.
  3. 選取「puree」(泥狀)設定並啟動調理機。讓程式執行完成。
  4. 取下杯蓋,將所有乾燥配料倒入容杯中,蓋緊杯蓋。
  5. Select Variable 1 and start the machine. Quickly move to Variable 10 and blend for 10 seconds.
  6. Portion into prepared muffin tins and bake for 20 - 25 minutes.
  7. Cool on a wire rack for 5 minutes then carefully remove muffins from the pan.
