Homemade Vitamix Baking Recipes

Pumpkin Brownies

Brighten the flavor of these brownies with more spice, fresh ginger, or orange zest and top with powdered sugar or your favorite icing.

Ingredients

  • 4 large eggs
  • 15 dried dates, pitted
  • 1 cup (255 g) unsweetened applesauce
  • 15 ounces (425 g) pumpkin
  • 2 cups (240 g) whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • powdered sugar

Directions

  • Place eggs, dates, applesauce and pumpkin into the Vitamix container in the order listed and secure lid.
  • Select Variable 1.
  • Turn machine on and slowly increase speed to Variable 10, then to High.
  • Blend for 1 minute using tamper if needed.
  • Pour mixture into stainless bowl and mix in dry ingredients.
  • Transfer mixture to a greased 10-inch X 15-inch (25 cm x 38 cm) non-stick cake pan
  • Bake brownies for 30 minutes in a 350°F (180°C) oven, until a toothpick inserted comes out clean.
  • To serve cut brownies and sprinkle with powdered sugar if desired.

Carrot and Raisin Muffins

Sweet raisins and carrots marry well in this snack-sized bite for a quick breakfast or afternoon tea.

Ingredients

  • 1⅔ cup (265 g) self-rising flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ⅔ cup (100 g) raisins
  • ¾ cup (90 g) carrots, halved
  • 2 large eggs
  • ¾ cup (150 g) granulated sugar
  • ⅔ cup (150 ml) light olive oil

Directions

  • Preheat the oven to 350°F (180°C). Spray a 12 cup muffin tin with cooking spray or line with paper liners.
  • Place flour, baking soda, and spices in a medium-size mixing bowl and stir lightly. Set aside.
  • Place carrots into the Vitamix container and secure lid.
  • Select Variable 1.
  • Turn machine on and increase the speed to Variable 6.
  • Blend for 6-7 seconds until very finely chopped. Stop machine and remove lid.
  • Add eggs, sugar and oil to the carrots in the Vitamix container and secure lid.
  • Select Variable 1.
  • Turn the machine on and increase speed to Variable 5.
  • Blend for 30 seconds until thick and creamy.
  • Pour carrot mixture into flour mixture with raisins and fold to combine. Spoon the mixture into the prepared muffin tin.
  • Bake for 20-25 minutes until golden brown. Transfer to a wire rack to cool, then serve.

  • 1 cup (95 g) oat bran
  • 1 cup (125 g) all-purpose flour

  • 3 Tablespoons granulated sugar

Directions

  • Combine oat bran, flour, baking powder, baking soda, and salt into a large mixing bowl. Set aside.
  • Place eggs, milk, and sugar into the Vitamix container and secure lid.
  • Select Variable 1.
  • Turn machine on and slowly increase speed to Variable 10, then to High.
  • Blend for 20 seconds.
  • Stop machine. Remove lid and add dry mixture to wet mixture, and replace lid.
  • Select Variable 1.
  • Turn machine on and slowly increase speed to Variable 5 for 15 seconds, using the tamper to press the ingredients into the blades.
