Buttermilk Pancakes

With the turn of a dial you can quickly and easily mix batters, waffles, cakes, cookies, muffins and quick breads. Perfect for all of those special occasion recipes too, like holiday pies!

Ingredients

  • 2 cups (480 ml) buttermilk
  • 2 large eggs
  • ¼ cup (60 ml) light olive oil
  • ½ teaspoon salt, optional
  • ¼ cup (50 g) granulated sugar
  • 1 cup (125 g) all-purpose flour
  • 1 cup (120 g) whole wheat flour
  • ½ teaspoon baking soda
  • 2 ¼ teaspoons baking powder

Directions

  1. Place buttermilk, eggs, oil, salt, optional, and sugar into the Vitamix container and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to Variable 5. Blend for 10 seconds, using the tamper to push ingredients toward the blades. 
  3. Remove the lid plug add flours, baking soda, and baking powder.  Replace lid plug and blend for an additional 20 -25 second, using the tamper until mixture is combined.
  4. Let batter sit 5 to 10 minutes before cooking to yield best texture and flavor.  Pour 1/8 to 1/4 cup (30-60 ml) batter onto a hot, prepared griddle and cook till golden brown on each side.

  • 1 cup (120 g) whole wheat flour
  • ½ teaspoon baking soda
  • 2¼ teaspoon baking powder

Directions

  1. Place buttermilk, eggs, oil, salt, and sugar into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5 or 6.
  4. Blend for 5 seconds and remove lid plug.
  5. Add flour, baking soda, and baking powder through the lid plug opening.
  6. Replace lid plug and blend for an additional 20 to 25 seconds, using the tamper until mixture is combined.
  7. Pour 1/8 to 1/4 cup (30-60 ml) batter onto hot, prepared griddle and bake.

Chef's Notes

For recipe variation, use 1 cup of wheat berries instead of the flour. Grind berries in Dry Grains Container for 1 minute on High prior to using in recipe.
