Pisco Sour

This classic cocktail is made with Pisco a unique alcohol with a very rich history to research.

  • 1 ½ fl.oz (45 ml) pisco
  • 1 ½ fl.oz (45 ml) Citrus Juice
  • ¾ ounce (20 ml) simple syrup
  • ½ ounce (10 ml) egg white
  • 1 cup (130 g) ice cubes, plus additional as needed for serving


  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 15 seconds.

Chef's Notes

  • A pisco sour is traditionally served without ice, but this cocktail can be served either way.  This recipe can be quadrupled to make a batch of drinks for a party.The aeration container combines the ingredients, foams the egg whites, and chills the cocktail...all in one process. To make it vegan, aquafaba (chickpea liquid) may be substituted out for the egg whites.
