Spicy Mango Chutney [Immersion Blender]

A great dip to go with vegetable chips, accompany a protein or even on a cheese board, this versatile chutney will steal the show.

Ingredients

  • ¼ small (60 g) white onion, peeled, cut into large chunks
  • ¼ cup (45 g) roasted red pepper
  • 2 garlic cloves, peeled
  • 1 slice (5 g) fresh ginger root, 1/4"
  • ½ (15 g) jalapeño, cut into large chunks, seeded if desired
  • 2 cups (300 g) mango, peeled, pitted, cut into large chunks
  • 2 Tablespoons honey
  • 2 slices (30 g) lime, 1/4" each
  • ½ teaspoon kosher salt
  • 1 Tablespoon fresh parsley leaves, chopped
  • 1 Tablespoon fresh mint leaves, chopped

Directions

  1. Place the onions, pepper, garlic, ginger, jalapeno, mango and lime into the work bowl fitted with the chopping blade. Snap the lid into place and secure the immersion motor to the lid. 
  2. Select Variable 5 and pulse by pressing the power button 4-6 times or until desired consistency is reached.
  3. Place into a medium-sized saucepan and add honey and kosher salt. Let simmer for 25-30 minutes to create a thicker consistency and to combine the flavors together.
  4. Once done cooking, chill completely and stir in the fresh chopped parsley and mint.

Chef's Notes

  • Depending on the sweetness of the mango, you may be able to omit the honey altogether.
