Summer Squash Salad
This amazing salad uses your Vitamix machine to its full potential. The food processor attachment and blending container chops, mixes, and slices to create this satisfying summer grilling salad.
Ingredients
- 4 (900 g) summer squash
- ½ bunch (30 g) fresh parsley leaves
- ½ cup (110 g) feta cheese, optional
- ½ cup (50 g) walnuts
- 1 cup (240 ml) Lemon Garlic Dressing
Directions
- Slice the squash into 1/4" rounds.
- Place the parsley, cheese, and walnuts into the Vitamix container and secure the lid. Pulse the mixture 10 times or desired consistency is reached. Add the mixture to the bowl with the squash.
- Add 1 cup of the lemon garlic dressing to the salad mixture and toss to combine.

- This salad is great to use all the squash in the garden during the summer. Adding nuts to salads increases healthy fats, fiber and protein.
