Soft Sugar Cookies

Ingredients

  • ½ cup (115 g) plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup (110 g) melted butter
  • ½ teaspoon almond extract
  • 1 cup (120 g) whole wheat flour
  • 1½ cup (150 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Directions

  1. Heat the oven to 375°F (190°C).
  2. Place yogurt, egg, vanilla, butter, powdered sugar, and almond extract into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase to the highest speed.
  5. Blend for 30 seconds.
  6. In a large mixing bowl, combine the flours, baking soda, and cream of tartar.
  7. Stir together the liquid from the Vitamix container into the dry ingredients in the mixing bowl. Let batter sit, refrigerated, for 2 to 3 hours.
  8. On a lightly floured surface, roll dough to ⅛ inch (0.3 cm) thick and place on a bakin`g sheet. Score into 18 pieces.
  9. Bake for 8 minutes.
  10. Cool and cut into fun shapes and let cool.

Gingersnap Cookies

Ingredients

  • 1 cup (120 g) whole wheat flour
  • 1 cup (125 g) all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 large egg
  • ¼ cup (60 ml) molasses
  • 1 cup (200 g) granulated sugar
  • ¾ cup (130 g) margarine
  • ⅓ cup (65 g) cinnamon sugar
  1. Directions

  2. Heat the oven to 350°F (180°C).
  3. In a bowl, combine flours, ginger, baking soda, ground cinnamon, and salt. Set aside.
  4. Place egg, molasses, sugar, and margarine into the Vitamix container in the order listed and secure lid.
  5. Select Variable 1.
  6. Turn machine on and slowly increase to the highest speed.
  7. Blend for 15 seconds.
  8. Add the liquid mixture from the Vitamix container to the bowl with the dry ingredients and stir to incorporate. Chill the dough for 30 minutes.
  9. Using a #40 scoop, scoop dough and roll into a 1-inch (2.5 cm) ball between your hands.
  10. Roll each ball in the ground cinnamon sugar and place 2 inches (5 cm) apart on an non-greased baking sheet.
  11. Bake for 10 to 12 minutes until the tops are rounded and slightly cracked.
