Avocado Fudge Balls
Satisfy your sweet tooth while using extra avocados you have on hand. Enjoy right out of the refrigerator or freezer.
- ½ cup (120 ml) cream of coconut
- 3 Tablespoons (45 ml) maple syrup
- ¼ teaspoon vanilla extract
- 2 avocados, halved, pitted, peeled
- ⅔ cup (115 g) semi-sweet chocolate chips
- Place cream of coconut, maple syrup, vanilla, and avocados into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 35 to 45 seconds, using the tamper to press the ingredients into the blades.
- Spread mixture into a small, square plastic storage container and freeze until set, about 3 hours.
- Melt chocolate in a bowl in the microwave.
- Scoop chilled avocado mixture into ball shapes with a small cookie scoop.
- Dip into the melted chocolate and place on a parchment-lined pan. Return to the freezer to set.

Rated 2 out of 5 by RobertG from Could be improved I ended up making this recipe and another one that was cream cheese based. The Avocado one did not have much flavor (or sweetness of course) so it ended up being a bit bland for a dessert. Healthier than most and vegan. It was hard to get them in ball form, maybe because I froze them too much. It reminded me of mochi balls because of the lack of sweetness and bland flavor, but nice texture. I would probably recommend combining this recipe with the over-sweet cream cheese one so you would get part of the healthier and cut the sweetness. Bottom line, I think most people may not enjoy this as much as a "regular" dessert.

Rated 4 out of 5 by EVA G from different, but good! Don't tell anyone that they are made with avocado if you want them to try these! I added 4 Tablespoons of Maple syrup after reading another review that said they weren't very sweet. I really like them! Using a small bowl to heat the chocolate gave me problems in turning the balls to coat them, and the chocolate coating ended up too thick! I then tried heating the chocolate in a small stainless frying pan,over very low heat and that gave me the space to roll the balls and get them coated with the amount of chocolate I wanted.

Rated 5 out of 5 by Ehuanochtli from Elegantly decadent This is a great recipe all around, easy to make, healthy and flavorful. The key is melting the chocolate correctly and coating the balls with a thin layer, otherwise you will taste the chocolate more than the avocado mixture. Definitely a healthy fats treat, and great treat for kids too!
