Avocado Ranch Dressing

Avocado gives this simple dressing an extra creamy texture and adds great flavor.

Ingredients

  • 1 cup (240 ml) soy milk , or low fat buttermilk
  • ½ (75 g) avocado, pitted, peeled
  • ⅛ (20 g) small red onion, peeled
  • 2 garlic cloves, peeled
  • ¼ cup (60 ml) water
  • ½ teaspoon salt, optional
  • ⅛ teaspoon ground black pepper
  • 1 Tablespoon fresh dill
  • 1 Tablespoon fresh parsley leaves

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades. Blend for 45 seconds.
