Edamame Guacamole
This guacamole gives a great twist to the traditional with edamame which adds additional nutritional benefits
Ingredients
- 3/4 cup (180 ml) water
- 1 lime, peeled
- 1 bunch (25 g) fresh cilantro leaves, stems removed
- 1 garlic clove, peeled
- 1/2 jalapeño, stemmed with seeds
- 2 (250 g) avocados, peeled, pitted
- 3 cups (460 g) frozen edamame beans, shelled, thawed
- 1 teaspoon sea salt, optional
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
- Blend for 45 seconds to a minute.
Chef's Notes
- If the mixture is too thick add a little water until the desired consistency is reached. If you would like to have a less spicy dip remove the seeds from the jalapeno. Use as a spread on sandwiches or a dip for pita chips and fresh cut or roasted vegetables.
- The addition of edamame pumps up the protein in this delicious twist on guacamole.
