Gluten-Free Date Nut Bars

Dates and orange lend a fruity flavor to these bars, while walnuts provide a little crunch.

Gluten-Free Date Nut Bars


  • 1 cup (115 g) chopped walnuts
  • ¾ cup (110 g) dates, pitted, chopped
  • Zest of 1 orange
  • 3 large eggs, or egg substitute
  • ½ cup (100 g) granulated sugar
  • ¼ cup (60 ml) orange juice
  • ½ teaspoon ground cinnamon


  1. Heat the oven to 350°F. Grease an 8 inch square baking pan.
  2. Place walnuts in the Vitamix container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 4.
  5. Blend for 10 seconds. Remove to a bowl and stir in the dates and orange zest.
  6. Place eggs, sugar, orange juice and cinnamon into the Vitamix container in the order listed and secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase speed to Variable 10, then High.
  9. Blend for 15 seconds.
  10. Add the mixture to the bowl with the walnuts and dates and stir to combine.
  11. Pour mixture into prepared pan and bake for 30 minutes.
  12. Allow to cool thoroughly before slicing.
