Pho
This healthy Vietnamese noodle soup has a rich base of beef broth, complemented by ginger, star anise, and basil. The garnishes also are spectacular, from scallions and cilantro, to sirloin and pho noodles.
Ingredients
- 4 cups (960 ml) beef stock
- ½ medium (75 g) onion
- 1 Tablespoon (5 g) fresh ginger root, peeled
- 1 teaspoon kosher salt, optional
- 1 whole star anise
- 2 Tablespoons fish sauce
- 1 Tablespoon dried basil
- Garnish:
- beef sirloin, sliced thinly
- cup fresh cilantro leaves
- rice noodles, cooked
- Tablespoon green onion, sliced
Directions
- Place all ingredients except garnishes into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds.
- To serve, pour 12 ounces (360 ml) of broth into a bowl and garnish as desired.

- For some other fun pho toppings, try using sliced tofu, shredded carrots, bok choy, bean sprouts, or a squeeze of fresh lime juice.
