Radish and Kimchi Soup
This rich soup is sure to excite your taste buds with plenty of umami from both the broth and kimchi.
Ingredients
- 1 (350 g) daikon radish, quartered
- 3 cups (240 ml) water
- 1 cup (230 g) tofu, chopped
- 1 cup (140 g) white fish (cod, sole, pike), chopped
- 1 Tablespoon shredded nori
- ½ cup (75 g) kimchi
- ¾ teaspoon salt, optional
Directions
- Place the radish and water into the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 20 seconds.
- Pour the broth into a medium-sized saucepan and add fish, nori, and tofu. Bring to a boil and add salt, optional. When desired flavor is reached, divide kimchi evenly between bowls and pour broth over.

- Daikon radish is a sweeter, milder version of a typical radish. Using the Vitamix to purée it helps to make a flavorful broth that is whole-food based, and delicious too!
