Roasted Pepper and Walnut Pesto

Ingredients

  • ½ cup (120 ml) extra virgin olive oil
  • 1 ½ cups (225 g) roasted red pepper, seeded
  • 1 garlic clove
  • ¾ cup (75 g) walnuts, toasted
  • ½ cup (10 g) fresh basil leaves
  • ½ cup (55 g) sun dried tomatoes, drained
  • ½ cup (50 g) soy parmesan [or parmesan cheese]
  • ½ teaspoon sea salt
  • 1 teaspoon lemon zest
  • ¼ teaspoon ground black pepper

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 6.  Pulse about 18 times, using the tamper to press the ingredients toward the blades until desired consistency is reached.
