Apple-icious Whole Grain Cereal

Start your day with this sweet and hearty whole-grain cereal. Apples and cinnamon sweeten, while walnuts add texture.

Apple-icious Whole Grain Cereal

Ingredients

  • 50 g (¼ cup) brown rice, uncooked
  • 50 cups (¼ cup) whole wheat kernels
  • (¼ teaspoon) salt, optional
  • 240 ml (1 cup) water
  • 120 ml (½ cup) apple cider
  • (1 Tablespoon) ground cinnamon
  • (½ medium) apple, chopped
  • (¼ cup) walnuts

Directions

  1. Place rice, wheat and salt, (optional) into the Vitamix container and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to  Variable 7. Blend for 20-25 seconds, using the tamper to push ingredients toward the blades. Grind to desired degree of fineness.
  3. Place liquid ingredients and cinnamon into a sauce pan and bring to a boil. Stir in wheat and rice mixture.  Reduce heat to low and simmer covered for 20 minutes.  Add apple and walnuts to the wheat/rice mixture with 5 minutes left in the cooking process.

Chef's Notes

  • Add a touch of honey to finish off this great morning treat.
