Chocolate Oat Muffins [Food Processor Attachment]
Enjoy these fresh, flavor-packed chocolate oat muffins without any gluten or dairy.
Ingredients
- 150 g (¾ cup) unsweetened applesauce
- 100 g (1 cup) rolled oats
- 180 ml (¾ cup) date syrup
- 55 g (¼ cup) vegan margarine
- 13 g (2 Tablespoons) flax meal
- 200 g (1 ½ cups) All-Purpose Gluten Free Flour
- 25 g (¼ cup) unsweetened cocoa powder
- (1 ½ teaspoons) baking powder
- (1 teaspoon) baking soda
- 70 g (½ cup) cacao nibs, optional
Directions
- Preheat oven to 350°F (175°C).
- Line a muffin pan with 12 muffin papers and set aside. Place applesauce and rolled oats into a small bowl and stir to combine. Set aside.
- Place date syrup, margarine, and flax meal into the Food Processor Work Bowl fitted with the Multi-Use Blade and secure the lid. Start machine and allow to process for 30 seconds, or set timer for 30 seconds and allow it to complete programmed cycle.
- Add the remaining ingredients to the Food Processor Work Bowl and pulse 6-8 times to incorporate.
- Scoop into prepared muffin pan and bake in preheated oven for 15-20 minutes, or until muffins are cooked through. Cool before enjoying.
