Grilled Sweet Corn Dressing [Immersion Blender]

This seasonal dressing uses the best summer has to offer, creamy sweet corn. Combined with a few other ingredients, this makes a great dressing for something robust, like a romaine salad.

Ingredients

  • 265 g (2 ears) sweet corn, grilled, cut off the cob
  • 20 g (1 ) jalapeño, grilled
  • (3 ) green onion, grilled
  • (½ ) lime, peeled
  • (½ teaspoon) garlic powder
  • 60 ml (¼ cup) extra virgin olive oil
  • 30 g (1 bunch) fresh cilantro leaves
  • 240 ml (1 cup) cold water
  • (½ teaspoon) kosher salt, optional

Directions

  1. Place all ingredients into the 32-ounce Vitamix immersion jar or an appropriately sized container in the order listed. Submerge the immersion blender below the surface of the liquid, or as close to the ingredients as possible.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Move the immersion blender around, including up and down, to blend the ingredients for approximately 2 to 2 1/2 minutes or until desired consistency is achieved. Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
  3. Nutrition Note: Why use homemade salad dressings? They're less expensive, fresher, and made with real whole food ingredients.  And of course, they're so easy to make!

Chef's Notes

  • This dressing tastes best when it is freshly made. It can be stored under refrigeration for 3 - 4 days.  Not a spicy person? Remove half the seeds from the jalapeño to balance the heat with the sweet from the corn.
