Spicy Frozen Horchata

This non-dairy version of the traditional Mexican drink is full of flavor and sure to be a hit with the kids!

Spicy Frozen Horchata

Ingredients

  • For the Horchata:
  • 95 g (½ cup) white rice, soaked overnight, drained
  • (2 sticks) cinnamon
  • 60 ml (¼ cup) maple syrup
  • 720 ml (3 cups) water
  • For the Frozen Horchata:
  • (½ ) Fresno chili, seeded
  • 260 g (2 cups) ice cubes

Directions

  1. For the Horchata: Place all ingredients into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute 30 seconds. Chill completely.
  2. To make the Spicy Frozen Horchata: Place the chilled horchata, Fresno chili, and ice cubes into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to Variable 6. Blend for 15 seconds.  Serve immediately.

Chef's Notes

  • If desired strain the horchata through a fine mesh strainer.  Adding a little kick of spice to a frozen drink gives you two wonderful sensations at once: fire and ice.
