Sweet and Spicy Vinaigrette
A sweet and spicy, Thai-inspired dressing, delicious on salads with pea pods, radishes, and shredded carrots, or as a marinade with grilled meats and vegetables.
Ingredients
- 30 ml (⅛ cup) apple cider vinegar
- (4 ) dates [or 2 Tablespoons honey], pitted
- (½ teaspoon) sriracha sauce
- (½ teaspoon) soy sauce
- (½ ) garlic clove, peeled
- (½ piece) fresh ginger root, 1/8" thick
- (½ teaspoon) ground black pepper
- 80 ml (⅓ cup) extra virgin olive oil
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the blade base.
- Start the blender on its lowest speed, then quickly increase to its highest speed
- Blend for 20 seconds.

- (½ teaspoon) ground black pepper
- 320 ml (1 ⅓ cups) extra virgin olive oil
Directions
- Place vinegar, dates, Sriracha sauce, soy sauce, garlic, ginger root and black pepper into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed
- Blend for 15 seconds. Reduce speed to variable 5 and remove lid plug.
- Slowly pour oil through the lid plug opening in a slow, steady stream. Replace lid plug.
- Slowly increase to its highest speed. Blend for 15 seconds or until emulsified.
