Whipped Aquafaba [Immersion Whisk]

When you need a vegan alternative to whipped cream or a certain recipe calls for whipped aquafaba, the Vitamix Immersion Blender whisk attachment has your back.

Ingredients

  • 120 ml (½ cup) low sodium aquafaba, (chickpea liquid, chilled well)
  • (½ teaspoon) cream of tartar
  • 25 g (¼ cup) powdered sugar, optional

Directions

  1. Pour ingredients into the 32-ounce Vitamix immersion jar or an appropriately sized container.
  2. Attach the Whisk to the immersion blender and submerge below the surface of the liquid, or as close to the ingredients as possible.
  3. Start the immersion whisk on its lowest speed, then slowly increase to its highest speed. Move the immersion whisk around, including up and down, to whisk the ingredients for approximately 2 to 3 minutes gradually adding the sugar to the mixture, until stiff peaks form.

Chef's Notes

  • Aquafaba is a deliciously light vegan alternative to meringue.
  • The whipped meringue is delicate, so we are using a powdered sugar. Omit it and use a date syrup or fresh fruit puree when using aquafaba to add natural sweetness to the dessert.
