Mini-Chopper Attachment Summer Squash Salad [Immersion Blender]

When tossing together this yummy summer grilling salad, the immersion blender makes chopping veggies and blending dressings easy work.

Summer Squash Salad

Ingredients

  • 4 (900 g) summer squash
  • ½ bunch (30 g) fresh parsley leaves
  • ½ cup (110 g) feta cheese, optional
  • ½ cup (50 g) walnuts
  • 1 cup (240 ml) Lemon Garlic Dressing

Directions

  1. Place the parsley, feta and walnuts into the work bowl of the Immersion Blender Mini-Chopper Attachment. Snap the lid into place and secure the immersion motor to the lid.
  2. Select variable 3 and run continuously for 30 seconds or until desired consistency is reached.
  3. Slice the summer squash into half moons and toss with chopped mixture and dressing.
