Vegan Date Brownies [Food Processor Attachment]
A great vegan brownie recipe using the food processor for multiple applications.
Ingredients
- 6 large (85 g) pitted dates
- ½ cup (60 ) Oat Flour, g
- ⅓ cup (35 g) unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 pinch salt, optional
- 2 teaspoons baking powder
- 1 ¼ cups (325 g) cashew butter
- ½ cup (120 ml) maple syrup
- 1 teaspoon vanilla extract
Directions
- Preheat oven 350°F. Line the bottom of a 9x9 baking pan with parchment paper and spray the sides generously with cooking spray. Set aside.
- Place dates in a microwave safe container and cover with water. Microwave on high for 2 minutes, draining off all excess water. Set the dates aside.
- Place oat flour, salt, optional, cocoa powder, baking soda and baking powder in a medium bowl and stir to combine.
- Place dates, cashew butter, maple syrup and vanilla extract in the Food Processor Work Bowl fitted with the Chopping Blade. Set the timer for 45 seconds. Start the machine and let it complete the programmed time.
- Remove the date mixture and combine it with the flour mixture. Scrape into prepared pan.
- Using an offset spatula dipped in water, gently spread the mixture evenly in prepared pan. Dip as often as needed to keep mixture from sticking to spatula while spreading.
- Bake in preheated oven for 30 minutes. Let cool completely before cutting and serving.
Chef's Notes
- Spatula instructions and spraying your pan are very important in this recipe, otherwise you will have a sticky mess to clean up.
