Apple Cider Vinaigrette (for Coleslaw)

Enjoy your coleslaw on the light and healthy side with this slightly sweet, subtly tangy vinaigrette made of olive oil and organic apple cider vinegar.

Ingredients

  • 1 ½ cups (360 ml) extra virgin olive oil
  • 1 cup (240 ml) apple cider vinegar
  • 1 Tablespoon Dijon mustard
  • ½ Tablespoon celery seed
  • 2 dates [or 2 Tablespoons honey], pitted

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. 
  3. Blend for 30 seconds.
