Onion Date Jam [Food Processor Attachment]

Onions, dates, and balsamic vinegar combine to make a sweet and savory jam, perfect for cheese platters, hors d'oeuvres, and more.

Ingredients

  • 3 large (850 g) red onion, peeled, quartered
  • 1 cup (165 g) medjool dates, pitted
  • 2 Tablespoons (30 ml) avocado oil
  • 2 teaspoons kosher salt, optional
  • 1 cup (240 ml) dark balsamic vinegar
  • ¼ cup (60 ml) date syrup

Directions

  1. Fit the Food Processor with the Multi-Use Blade.  Place onions and dates into the Vitamix container and secure the lid.
  2. Pulse 10 to 12 times until onions and dates are uniformly chopped (the smaller the better, but be careful not to create a paste).
  3. Heat a heavy-bottomed sauce pot or sauté pan over medium-high heat. Add avocado oil and heat. Add the onion/date mixture, along with salt. Sauté over medium- high heat for 6 to 8 minutes, stirring occasionally, slightly caramelizing the onions. After caramelizing, reduce the heat to medium and add the balsamic vinegar and date syrup. Stew over medium heat until the balsamic vinegar and date syrup reduces to a syrupy consistency, approximately 10 to 12 minutes.
  4. Cool and store for later use.

Chef's Notes

  • This recipe uses dates for sweetness, instead of the artificial sugars typically found in jams. The natural flavors of onions and balsamic enhance the jam. This recipe is great for hors d'oeuvre parties, with meat and cheese platters, vegetables, or spread on crackers. Use a cheaper dark balsamic vinegar; you are only reducing it to intensify the flavor.
