A drinkable vacation with the sweet flavors of pineapple and rum—drink umbrella not included!
- 1 fluidounce (30 ml) light rum
- 2 Tablespoons cream of coconut
- ¼ cup (40 g) pineapple
- ½ cup (120 ml) coconut milk
- 1 cup (130 g) ice cubes
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds or until desired consistency is reached.

Rated 2 out of 5 by AdamLemurWilson from Not great Too much coconut flavor. Added about 4x pineapple. Needed a lot more ice to get the texture right. I would recommend more pineapple, mix all but ice first, then be careful not to over blend after adding ice. The best results came from pulsing the ice then blending for about 15 seconds.

Rated 1 out of 5 by westcoast21 from Not up to par I tried this recipe in my vitamix, following it exactly, only leaving out the rum. It turned out watery and relatively tasteless for a piña colada. After that, I added a 1/2 cup more ice because I wanted the usual fine slush consistency of a piña colada, but it just wouldn't whip up. I ended up wasting my ingredients, which is a waste of money. Disappointing experience.
