Pineapple Lemon Sorbet with Grilled Peaches
Some of the best desserts come from a few, simple ingredients. Using perfectly ripe peaches for this dish is essential, or any stone fruit that you can find in season - paired with a tangy sorbet, this is a real crowd-pleaser.
Ingredients
- 6 (780 g) peaches, halved, lightly brushed with oil
- 1 cup (240 ml) water
- 3 lemons, peeled
- 4 cups (625 g) frozen pineapple chunks
- honey, for drizzling, if desired
Directions
1. Preheat your grill over medium-high heat. Make sure grates are scraped clean and brushed lightly with oil, and place the halved peaches, cut-side down, onto the grates. Grill for 2-3 minutes, moving to the top rack or cooler part of the grill after grill marks are achieved, cooking just until tender but not overcooking. Remove to a plate or sheet tray.
2. Place water and lemons into the Vitamix container and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, blending for 30 seconds.
3. Stop the machine, remove the lid and add the pineapple, then secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, using the tamper to press ingredients toward the blades.
In about 30-60 seconds, the sound of the motor will change and four mounds should form. Stop the machine. Do not over mix or melting will occur. Drizzle with honey if desired and serve immediately.
