Vegan Eggnog

This is a deliciously creamy eggnog that vegans can enjoy during the holidays.

Vegan Eggnog

Ingredients

  • 1 can (414 ml) lite coconut milk
  • ½ (120 ml) Cashew Milk
  • 3 Tablespoons (45 ml) maple syrup [or date syrup]
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 30 seconds.
  3. Chill eggnog thoroughly to allow flavors to combine. Stir before serving adding a sprinkle of ground nutmeg on top immediately before serving.

Chef's Notes

  • *Add 2 oz of brandy, cognac or bourbon for a spiked version.
  • Soymilk can be substituted for the coconut milk for another vegan variation of this recipe.
