Chimichurri [Food Processor Attachment]
Pair this spicy marinade or dipping sauce with grilled fish, chicken, red meat, sausage or veggies.
Ingredients
- 60 ml (¼ cup) red wine vinegar
- 30 ml (2 Tablespoons) fresh lemon juice
- 50 g (⅓ cup) red onion, peeled
- 30 g (1 bunch) Italian flat leaf parsley, leaves only
- 30 g (¾ cup) fresh cilantro leaves
- 5 g (¼ cup) fresh oregano
- (6 ) garlic cloves, peeled
- 10 g (½ ) jalapeño, seeded
- (¼ teaspoon) sea salt
- (⅛ teaspoon) ground black pepper
- 180 ml (¾ cup) extra virgin olive oil
Directions
- Fit the Food Processor with the Multi-Use Blade. Place all ingredients except the olive oil into the Vitamix container and secure the lid.
- Start the machine and processor for 10-15 seconds. Stop the processor, remove the lid and scrape down the sides of the bowl.
- Secure the lid again and start the machine and process for an additional 30 seconds. After the 30 seconds, pour the oil into the Small Food Pusher which has a built in emulsion hole on the bottom. Allow the oil to incorporate and process for an additional 15 seconds. Total processing time should be about 1 1/2 minutes.
