Creamy Avocado Pasta Salad
Avocado gives this pasta salad its creaminess and adds fiber, healthy fats, and vitamins. A great dish for warmer weather, this pasta salad fills you up without weighing you down..
Ingredients
- For the Dressing::
- 360 ml (1 ½ cups) water
- 350 g (3 ) ripe avocado, peeled, pitted
- (1 teaspoon) dried onion flake
- (½ teaspoon) granulated garlic
- (10 ) fresh basil leaves
- (½ teaspoon) kosher salt
- For the Salad::
- 454 g (1 pound) pasta, cooked, cooled
- 60 g (½ ) red onion, sliced thin
- 130 g (1 cup) cherry tomatoes, cut in half
- 145 g (½ ) cucumber, diced
- 180 g (1 cup) artichoke hearts, chopped
Directions
- For the Dressing:Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.
- For the Salad: Toss the avocado basil sauce with the pasta salad ingredients to combine. Hold in an airtight container until serving.
