Creamy Avocado Pasta Salad

Ingredients

  • For the Dressing::
  • 360 ml (1 ½ cups) water
  • 350 g (3 ) ripe avocado, peeled, pitted
  • (1 teaspoon) dried onion flake
  • (½ teaspoon) granulated garlic
  • (10 ) fresh basil leaves
  • (½ teaspoon) kosher salt
  • For the Salad::
  • 454 g (1 pound) pasta, cooked, cooled
  • 60 g (½ ) red onion, sliced thin
  • 130 g (1 cup) cherry tomatoes, cut in half
  • 145 g (½ ) cucumber, diced
  • 180 g (1 cup) artichoke hearts, chopped

Directions

  1. For the Dressing:Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 40-50 seconds, using the tamper to push ingredients toward the blades.
  3. For the Salad: Toss the avocado basil sauce with the pasta salad ingredients to combine. Hold in an airtight container until serving.
