Kale and Basil Pesto
This vibrant blend of kale and basil is perfect on any pasta.
Ingredients
- 240 ml (1 cup) extra virgin olive oil
- 120 g (1 cup) soy parmesan [or parmesan cheese]
- (3 ) garlic cloves, peeled
- 80 g (2 cups) fresh basil leaves
- 120 g (2 cups) kale
- 25 g (3 Tablespoons) pine nuts
- (¼ teaspoon) kosher salt, optional
- (1 pinch) ground black pepper
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to variable 5, using the tamper to press ingredients toward the blades.
- Blend for 20 to 30 seconds or until desired consistency is reached. For a smooth pesto blend on its highest speed.
