Lime Curd

This bright lime curd is beautiful on tarts and pastries, and you can easily substitute lemon for the lime zest.

Ingredients

  • 0.5 cup (120 ) fresh lime juice
  • 5 large (5 large) eggs
  • 200 g (1 cup) granulated sugar
  • 60 ml (¼ cup) honey
  • 0.12 teaspoon (⅛ teaspoon) salt, optional
  • 4 Tablespoons (4 Tablespoons) lime zest
  • 115 g (½ cup) unsalted butter

Directions

  1. Place juice, eggs, sugar, honey, salt, optional and lime zest into the Vitamix container in the order listed and secure lid.
  2. Start the machine, and slowly increase to its highest speed.
  3. Blend for 5:45 .
  4. Reduce speed to Variable 5 and remove the lid plug.
  5. Add butter, 1 piece at a time, through the lid plug opening incorporating butter completely between additions.
  6. Replace the lid plug and slowly increase the speed its highest speed.
  7. Blend for 30 seconds.
  8. Chill before serving or allow to cool slightly and serve at room temperature.
