Lime Curd
This bright lime curd is beautiful on tarts and pastries, and you can easily substitute lemon for the lime zest.
Ingredients
- 0.5 cup (120 ) fresh lime juice
- 5 large (5 large) eggs
- 200 g (1 cup) granulated sugar
- 60 ml (¼ cup) honey
- 0.12 teaspoon (⅛ teaspoon) salt, optional
- 4 Tablespoons (4 Tablespoons) lime zest
- 115 g (½ cup) unsalted butter
Directions
- Place juice, eggs, sugar, honey, salt, optional and lime zest into the Vitamix container in the order listed and secure lid.
- Start the machine, and slowly increase to its highest speed.
- Blend for 5:45 .
- Reduce speed to Variable 5 and remove the lid plug.
- Add butter, 1 piece at a time, through the lid plug opening incorporating butter completely between additions.
- Replace the lid plug and slowly increase the speed its highest speed.
- Blend for 30 seconds.
- Chill before serving or allow to cool slightly and serve at room temperature.
