Moroccan-Spiced Sweet Potato Soup

Moroccan Sweet Potato Soup

Ingredients

  • Tablespoon (1 Tablespoon) extra virgin olive oil
  • 130 g (1 medium) yellow onion, peeled, cut into large chunks
  • (3 ) garlic cloves, peeled, smashed
  • (1 teaspoon) cumin seeds
  • (1 teaspoon) coriander seeds
  • (¼ teaspoon) black peppercorns
  • (2 teaspoons) paprika
  • 400 g (2 ) sweet potatoes, cooked, halved
  • 840 ml (3½ cups) vegetable broth
  • (½ teaspoon) kosher salt, optional

Directions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until translucent, 2 – 3 minutes. Add all spices, cooking until aromatic, 3 – 4 minutes.
  2. Place the cooked mixture into the Vitamix container along with the sweet potatoes, broth, and salt, then secure the lid.
  3. Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 4 – 5 minutes or until steam can be seen from vented lid plug.
