Moroccan-Spiced Sweet Potato Soup

Ingredients
- Tablespoon (1 Tablespoon) extra virgin olive oil
- 130 g (1 medium) yellow onion, peeled, cut into large chunks
- (3 ) garlic cloves, peeled, smashed
- (1 teaspoon) cumin seeds
- (1 teaspoon) coriander seeds
- (¼ teaspoon) black peppercorns
- (2 teaspoons) paprika
- 400 g (2 ) sweet potatoes, cooked, halved
- 840 ml (3½ cups) vegetable broth
- (½ teaspoon) kosher salt, optional
Directions
- Heat the olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until translucent, 2 – 3 minutes. Add all spices, cooking until aromatic, 3 – 4 minutes.
- Place the cooked mixture into the Vitamix container along with the sweet potatoes, broth, and salt, then secure the lid.
- Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 4 – 5 minutes or until steam can be seen from vented lid plug.
