Oil-Free Blueberry Thyme Vinaigrette

Blueberries are great for sweets and baking but are even better on fresh summer salads.

Ingredients

  • 60 ml (¼ cup) water
  • (½ lime) peeled
  • (1 small) garlic clove, peeled
  • 300 g (2 cups) fresh blueberries
  • (¼ teaspoon) salt, optional
  • (⅛ teaspoon) ground black pepper
  • 20 g (1 small) shallot, peeled
  • 30 g (5 ) dates, pitted
  • (⅛ teaspoon) sprigs fresh thyme leaves

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then quickly increase to its highest speed.
  3. Blend for 1 minute or until desired consistency is achieved.
