Roasted Apple Vinaigrette

This delicious vinaigrette is perfect for summer and fall salads. Roasting the apples and shallots really brings out the sweetness.

Roasted Apple Vinaigrette

Ingredients

  • 475 g (3 medium) apples, seeded, halved
  • 65 g (1 ) shallot, peeled
  • 40 g (3 ) dates, pitted
  • (1 Tablespoon) Dijon mustard
  • 120 ml (½ cup) apple cider vinegar
  • 480 ml (2 cups) water

Directions

  1. Preheat oven to 400°F (205°C). Place apples and shallot on a prepared baking sheet. Place in preheated oven and bake for 15 minutes or until browned and tender.
  2. Place all ingredients into the Vitamix container in the order listed and secure the lid. Start the blender on its lowest speed, then quickly increase to its highest speed, and blend for 30 seconds.
