Roasted Zucchini Basil Pasta Sauce
Combining zucchini and basil takes advantage of some of summertime's best produce. Combined with "Parmesan" cheese, this simple sauce is great for weeknight dinners or cold pasta salads.
Ingredients
- 550 g (4 cups) zucchini, cut into chunks
- (2 ) garlic cloves, peeled
- 100 g (1 cup) yellow onion, peeled, cut into chunks
- 360 ml (1½ cups) vegetable stock
- 25 g (1 cup) fresh basil leaves, lightly packed
- 140 g (1 cup) Vegan Parmesan Cheese (or Parmesan)
Directions
- Preheat air fryer or oven to 400°F (200°C.) Place zucchini, garlic, and onion into air fryer and cook for 15 minutes, then remove and let cool slightly.
- Place the vegetable stock, basil, roasted mixture, and Parmesan into the Vitamix container and secure the lid. Start the machine on its lowest speed, then quickly increase to its highest speed. Blend for 60 seconds, or select Puree program.
- Once blended, toss your favorite pasta salad ingredients with enough sauce to coat, or ladle over hot pasta for a quick weeknight dinner.
