Salmon Burgers
Simple ingredients make up this satisfying, gluten-free salmon burger.
Ingredients
- 80 g (½ medium) yellow onion, peeled, cut into large chunks
- 80 g (½ medium) red bell pepper, cut into large chunks
- (4 ) cloves roasted garlic
- 10 g (½ cup) fresh parsley leaves
- 30 ml (2 Tablespoons) whole grain mustard
- 60 ml (¼ cup) Homemade Mayonnaise
- 60 g (½ cup) chickpea crumbs
- (1 teaspoon) fresh dill [or 1/4 teaspoon dried]
- (½ teaspoon) salt, optional
- (4 ) lemon peel
- 680 g (1 ½ pound) salmon fillet
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 7. Pulse 10 – 12 times or until everything is evenly chopped. Using the tamper to press ingredients into the blades. Portion into 3 oz. (85g) patties and cook as desired.
