Shrimp Chowder
A creamy chowder perfectly seasoned with marjoram and nutmeg.
Ingredients
- 45 ml (3 Tablespoons) light butter spread, optional
- 40 g (1 ) celery stalk
- 30 g (¼ small) onion
- 50 g (1 small) carrot
- (1 pinch) ground nutmeg
- (1 teaspoon) dried marjoram
- (1 Tablespoon) fresh lemon juice
- 480 ml (2 cups) chicken broth [or vegetable broth]
- 225 g (½ pound) shrimp
- 240 ml (1 cup) milk [or cashew milk]
Directions
- Place butter, celery, onion, carrot, marjoram, nutmeg, fresh lemon juice, and chicken broth into the Vitamix container in the order listed and secure lid.
- Start the blender on its lowest speed, then increase speed to Variable 4.
- Blend for 10 seconds.
- Pour into a 4-quart pan and simmer for 10 minutes. Add shrimp. Cook for 5 minutes or until shrimp is no longer pink. Add milk and maintain temperature. Serve immediately.
Chef's Notes
- Using lower speeds allows you to get a rough texture by chopping the ingredients. The chowder can be puréed to make into a bisque.
