Thai Fish Bites with Satay Dipping Sauce

Pair fresh fish bites with our spicy satay dipping sauce for an easy, delicious meal.

Ingredients

  • Fish Bites:
  • 200 g (½ pound) fresh white–fleshed fish fillets, sea bass suggested
  • 50 g (2 ounces) salmon fillet, trim or belly fat is best
  • 1 large (1 large) egg white
  • 1 teaspoon (1 teaspoon) thai red curry paste
  • 0.5 (½ ) lime, zest and juice
  • 1 Tablespoon (1 Tablespoon) thai fish sauce
  • 1 Tablespoon (1 Tablespoon) soy sauce
  • 1 cup (1 cup) fresh cilantro leaves, loosely packed, chopped
  • Satay Dipping Sauce:
  • 8 medium (8 medium) garlic cloves, peeled, finely chopped
  • 25 g (1 piece) fresh ginger root, finely chopped
  • 2 (2 ) thai red chilies, finely chopped
  • 1 Tablespoon (1 Tablespoon) sesame oil [or peanut oil]
  • 0.25 cup (¼ cup) vegetable broth
  • 0.25 cup (¼ cup) peanut butter
  • 1 Tablespoon (1 Tablespoon) hoisin sauce
  • 1 teaspoon (1 teaspoon) thai fish sauce
  • 1 (1 ) lime, juice of

Directions

  1. Place all of the fish bite ingredients except the cilantro into the Vitamix container. Start the machine and increase to Variable 4. Blend for 4 minutes until the mixture begins to look glossy.
  2. Transfer the fish mixture to a bowl and fold in the cilantro. Leave the mixture in the fridge for at least 1 hour to firm up.
  3. Portion the mixture into 25g balls, then push down slightly with the back of a spoon to create little patties.
  4. Set up a steamer (preferably bamboo) and bring to a low simmer and line the tray with parchment. Place half of the fish bites into the steamer and steam for 4 - 6 minutes.
  5. Repeat with the second batch.
  6. To make satay dipping sauce, gently sautee the garlic, chili and ginger in the oil on low heat for 1 -2 minutes, being careful not to burn. 
  7. Add the broth, peanut butter, hoisin and fish sauce and stir. Reduce by half and take off the heat to cool slightly.
  8. Carefully place the mixture into the Vitamix container and start the machine. Blend on Variable 4 until you achieve a smooth consistency. Season with the lime juice, to taste.

Chef's Notes

  • This recipe works best with firm, fresh fish. Pat the filets dry before blending.For a less-healthy alternative, the fish bites can be fried in vegetable oil.
